Avocado Fruit Salad

This is a light fruit salad that my mom used to make a lot for herself for lunch. I decided one day to give it a try. It is super delicious! It is a great salad to have as a light lunch or dinner, but is packed with flavor and texture.
The ingredients in this recipe are the basic ingredients to include. However, I have played with this recipe and added other ingredients as well. I have experimented with adding red onions, black or Kalamata olives, and green onions. Adding these in, definitely gives this salad more flavor (especially the Kalamata olives) and color!
I love eating this salad in the summer, when I prefer to eat lighter meals, but I also enjoy this year-round when I’m not feeling very hungry. I hope you enjoy this super yummy salad!
Ingredients:
½ and avocado
½ vine or Roma tomato
½ cup canned or jarred peaches
1 tbsp. vinaigrette dressing (I used Trader Joe’s Champagne style vinaigrette)
Salt and Pepper (optional)
Servings per recipe: 1

Directions:
Cut the avocado, tomatoes, and peaches into bite sized pieces.
Place chopped fruit into a bowl. Season with salt and pepper (optional).
Coat with dressing and stir until blended.
Serve and enjoy!
