Neapolitan Popsicles
Summer is coming! And what better time to introduce these delicious formula Neapolitan popsicles! This recipe is Part 1 in a 3 part series of recipes that I am making. I have been in the process of trying to find a new formula and have a lot of formula samples around. I thought that a creative way to use these would be to make these formula popsicles. I am using Nutricia’s Phenylade Essential Formulas for all of these recipes. For the Neapolitan popsicles, I obviously needed to use the chocolate, vanilla, and strawberry flavors. For parts 2 and 3 of this series, I will be using their orange creme and unflavored formulas to make more delicious popsicles.
So, a little tangent on my formula situation (skip to next paragraph for more recipe related information), I was recently using a combination of formulas from Cambrooke. I was on their Glytactin RTD Lite (vanilla) and the Glytactin restore (lemon-lime) formulas. I currently live in a state where my formula is provided by the state (AMAZING). Unfortunately, last fall (1) I found out that Cambrooke discontinued the Restore (so I just upped the amount the RTD) and replaced it with Refresh, but (2) shortly after that I heard from my dietician that the state removed all Cambrooke formulas from their list of formulas that they’ll cover. So that led to my formula hunt that I still haven’t completely resolved yet. But in hunting for a new formula I got all these samples and am now creating these amazing popsicles!
These Neapolitan popsicles are a little bit more time consuming to make, purely for the fact that the flavors are layered together. It’s definitely an all day process due to the time it takes for each layer to freeze before doing the next one. Also, it’s very important to make sure each layer freezes enough before adding the next layer otherwise the flavors will blend together and you won’t be able to see all those pretty layers. I would let each layer freeze for a good 30 minutes, if it still looks like it has liquid in the middle, let it freeze for longer to make sure those layers don’t blend.
I mixed all of the yogurt with the coconut milk first, then separated into three bowls before mixing the individual flavors. The chocolate and vanilla flavors are probably the easier flavors to mix. You just need to add cocoa powder and vanilla extract (respectively) and blend together. I used my Fruit Ninja Blender to mix these all together. You’ll get the best results using a blender or food processor. For the strawberry layer, I used fresh strawberries in addition to adding the strawberry flavored Phenylade Essential.
When mixing the formula, I used 40g for each flavor and just mixed it with a small amount of water. You don’t want to add too much water because then you won’t be able to use all of the yogurt mix in the popsicle and then you can’t guarantee all the same health benefits from the formula. The formula canister recommended 7 fl. Oz. of water per 40g but that was way too much water. You just need it to be enough liquid to blend the formula before adding it to the yogurt mixture.
I am really excited about sharing these popsicles with you guys! I do need to shout out a co-worker of mine for giving me the Neapolitan idea because my original idea was just plain strawberry, vanilla, and chocolate popsicles, which is kinda boring. But these came out so good! And I hope you guys are able to try these for yourself or for your little kiddos and I hope you love them as much as I do. It may be a fun creative way to get your kids to get their formula in this summer if they are usually a little stubborn about not wanting to drink it. Let me know what you guys think of these! Ingredients:
40g Nutricia Phenylade Essential Chocolate flavored
40g Nutricia Phenylade Essential Vanilla flavored
40g Nutricia Phenylade Essential Strawberry flavored
1 ½ cups Unsweetened Vanilla So Delicious Yogurt 360g (total)
1 can coconut milk ~ just the creamy white part (¾ cup = 190g)
½ cup sugar
3 tbsp Cocoa Powder
½ tsp Vanilla Extract
5 Fresh strawberries
9 fl. oz. Water (separated)
Needed Tools:
Servings per recipe: 10
Serving size; 1 popsicle
Phe per serving: 35 mg
Protein equivalent per serving: 3g
Directions:
Drain the excess water from the coconut milk can, BUT save the water for Part 3 of this recipe series!!
Mix the yogurt, coconut milk, and sugar until they are smooth.
Divide the yogurt mixture evenly into 3 separate bowls.
Chocolate Layer:
Pre-mix 40g of the Chocolate Phenylade Essential with 3 fl. oz. of water.
Add formula mix into 1 of the three bowls, add the cocoa powder and blend together. Use a blender for best results.
Pour the mixture into your popsicle mold but only fill ⅓ of the way up.
Place mold in the freezer for 20-30 minutes to set.
Vanilla Layer:
Pre-mix 40g of the Vanilla Phenylade Essential with 3 fl. oz. of water.
Add formula mix into the 2nd bowl, add vanilla extract and blend together
Pour the mixture into your popsicle mold filling it up to ⅔ of the way up.
Place mold in the freezer for 20-30 minutes to set.
Strawberry Layer:
Pre-mix 40g of the Strawberry Phenylade Essential with 3 fl. oz. of water.
Roughly chop your strawberries and put them into the blender. Pulse until they are pureed.
Add strawberries and formula to the 3rd yogurt bowl and blend together. Use a blender for best results.
Pour the mixture to fill the remaining mold, place the popsicle sticks into the tray and place into the freezer for 3-4 hours to fully freeze.
Once completely frozen, popsicles may be served! If you are having a difficult time getting the popsicle out, you can set the popsicle tray in lukewarm water for a few minutes to soften it up.
