Chocolate Cereal Bars

When I went to the NPKUA Conference this summer in Chicago, I had the opportunity to pick up a sample bag of low protein foods from the Promin table. One of the food items in the bag was their Chocolate Flavored Low Protein Cereal. It immediately made me think of college when I used to eat in the cafeteria. They used to always make cereal bars (similar to rice krispy treats) with all different kinds of cereal. I’m fairly certain they were just trying to use up the cereal before it expired, but I still enjoyed them.

I decided to make these chocolate cereal bars in ode to my college day desserts. This is a no-bake recipe, so it’s very easy to whip together and have as a snack or to bring as a party or holiday treat. All you need is the cereal, butter, and marshmallows. 

The only “cooking” you need to do is melt the butter and marshmallows together in a large pot. I used the miniature marshmallows because I find that they melt easier than the larger ones. As long as the pot is large enough to add the cereal you should be good. Once the marshmallows are melted and are smooth, turn the heat off and add the cereal. Blend it together well and make sure you are fully incorporating the marshmallow mixture at the bottom so it is not sticking to the pan. Then transfer it into the non-stick casserole dish/aluminium pan for it to set. Make sure you firmly press down on the cereal mixture to pack it in. Also make sure you let it sit long enough to fully cool, or else it will still be very sticky.

This recipe is a good recipe for any party gathering (hello Halloween!) . You can easily make a lot of it and it does not take a lot of effort to make. And it’s usually a fan favorite with kids. Anything marshmallow usually does the trick. Hope you guys enjoy this one!

Ingredients:

5 cups Promin Chocolate Cereal 186 g

8 oz Marshmallows 227g

3 tbsp Butter

Servings per recipe: 8 

Serving size: 1 square (54 g)

Phe per serving: 18.5 mg

Directions:

  1. Spray a 12 X 8” baking dish with nonstick cooking spray and set aside.

  2. In a medium to large size pan, melt the butter.

  3. Once the butter is melted, add in the marshmallows and stir until they have fully melted.

  4. After the marshmallows are fully melted, remove from heat and add the cereal.

  5. Combine the cereal and marshmallow mixture thoroughly. Make sure to mix well so the bottom of the marshmallow mixture has been blended in as well.

  6. Use a spatula to evenly press the cereal into the baking dish. Make sure it is firmly packed into the dish.

  7. Let the cereal bars cool completely, then cut into squares. Serve and Enjoy!
