Green Goddess Salad

It’s time to jump into spring! This is a very fresh, green salad that’s perfect for spring (and Easter!). I wanted to get this recipe up in March because I always associate green with the month of March, but it’s also a good Easter Sunday salad as well. The key to making this a great salad is to make sure that you are using fresh ingredients, and making the salad dressing yourself. 

I recently found this local produce grocery store near my home and I bought all my ingredients from them. Let me tell you, not only does it feel good to buy local, but it's also a refreshing change on my wallet. I am definitely going to keep going to this produce store and I am also trying to make more of an effort to eat more produce and make more of my own food when I can. 

To make this salad, you basically just need to chop all the ingredients into bite size pieces and add them together. This green goddess salad has been pretty popular online and the most common ingredients for this salad are the green cabbage, cucumbers, and spring onions. For this recipe, I also added green bell peppers but another topping you can add is avocado. I think the main idea is to just keep it simple, keep it green. 

The thing that really ties this whole recipe together is the salad dressing. I think you should definitely make it fresh as it will taste better. But if you buy a store version of a green goddess dressing, I totally understand the convenience of that. I actually made two different versions of this dressing and I honestly don’t know which one I like more. The first one I made with a Miracle Whip base (to mimic other dressings that use mayo), but the second one I made using avocado. I have posted the avocado dressing here, but if you would like the Miracle Whip-based dressing let me know and I can share it.

Green Goddess Salad nutrition facts (without dressing)




Green Goddess Salad:

Ingredients:

¼ head green cabbage (320g)

¾ cup cucumber (120g)

3 spring onions

½ cup green bell pepper (80g )  

2 tbsp Green Goddess Salad Dressing (see below)




Directions:

  1. Chop up all the ingredients (except the dressing of course) into bite size pieces.

  2. Add to salad bowl, top with dressing and mix together.

  3. Serve as a traditional salad or eat with your favorite cracker or chip, and enjoy!




Green Goddess Salad Dressing:

Ingredients:

1 Avocado 110g

¼ cup Parsley

⅓ cup Basil

1 tbsp Chives

1 large Green onion

1 clove Garlic 

1 tbsp White wine vinegar

¼ cup Olive oil

¼ cup Water

2 tbsp Lemon juice

½ tsp Salt 

½ tsp Black Pepper




Directions:

  1. Chop your avocado, herbs, and garlic. Add to the blender or mixer. 

  2. Add remaining ingredients into the blender or mixer.

  3. Blend until smooth. Add water if necessary to thin out the mixture. Serve over salad or other preferred meals, or use as a dipping sauce.
