Summer Banana Boats
It’s summertime! Let’s all enjoy a nice summer banana boat, shall we? Nice and fruity, but surprisingly filling. That banana and cookie butter really does fill you up. So if you are looking for a refreshing and filling snack this summer, look no further.

I feel like this recipe could easily be adapted to make other similar recipes, such as a banana split dessert. But this one is a red, white, and blue theme just in time for any independence day celebrations this summer. The fruit is easy to swap out if you have any aversion to strawberries, blueberries, or raspberries. Blackberries are also a good choice as a topping. My personal favorite is the strawberry one. It felt the most refreshing of the four. Like I mentioned earlier, this is a surprisingly filling dish, so the strawberries really give it that refreshing taste.
If you are making this for everyone in the family, you can definitely use peanut butter in place of cookie butter. Also a hazelnut or chocolate spread would also probably be a good swap if desired. I would definitely recommend a smooth spread, not a chunky one. When I was making these I ran out of my smooth cookie butter, and didn’t realize when I bought my next jar that it was chunky. It still works, but it's much easier to spread onto the banana when it’s not chunky.

Ingredients:
2 bananas
6 tbsp Biscoff cookie butter
1-2 Strawberries 15g
5-6 Raspberries 20g
5-6 Blueberries 10g
1 tbsp Mini chocolate chips
Powdered sugar (topping)
Servings per recipe: 4
Serving size: 1 banana boat (½ banana)
Phe per serving:
Strawberry: 60mg
Blueberry: 60mg
Raspberry: 63mg
Chocolate: 90mg
Directions:
Peel bananas and cut in half lengthwise.
Spread 1-2 tbsp of cookie butter on each banana half.
Cut strawberries into quarters
Evenly place all strawberries on one banana, all blueberries on another banana, etc. with all the other fruits and chocolate chips.
Coat the banana boats with a dusting of powdered sugar. Serve and enjoy!
